Additionally, wildlife is protected through enforcing strict no-hunting rules on farms. The result is delicious coffee that helps promote sustainability at the farm level. This coffee was grown at high altitudes of 1,400 to 1,750 meters. The plant varietals of Caturra, Colombia-Castillo flourish in rich volcanic soil with high levels of organic matter. Processing was the washed process, it is 80% sundried and 20% mechanical drying (due to rainfall). ROASTING COFFEE to perfection is truly an art, a distinct set of skills developed over time with experience. The most basic description of the roasting process would be that the beans need to be heated to around 400*F in about 7-12 minutes and then cooled quickly.
